How Alcohol-Infused Coffee Works

"If you use real gin, whiskey or brandy, does the coffee contain alcohol?"
The answer is simple:
No.
While we use real alcohol during the infusion process, the alcohol itself does not remain in the finished coffee.
Instead, the coffee retains the unique flavour characteristics and aromas associated with the spirit, while the alcohol is removed during roasting.

What Happens During Roasting?

These temperatures are far higher than the boiling point of alcohol.
Why the Alcohol Doesn't Remain
Pure alcohol (ethanol) begins evaporating at approximately:
78°C
Coffee roasting temperatures are substantially higher than this.
As the beans roast, the alcohol rapidly evaporates and is driven off during the roasting process.
By the time roasting is complete:
The alcohol has been removed.
What remains are the flavour compounds and aromatic characteristics that were absorbed during infusion.
This is why the coffee retains its unique personality without functioning as an alcoholic beverage.
