Rescue Roast® Chilli Hot Chocolate Brownies
Deep, fudgy chocolate brownies with a gentle chilli warmth that sneaks in right at the end.
We loved the Rescue Roast® Chilli Hot Chocolate so much that it felt slightly unfair to keep all that chocolate-and-chilli goodness inside a mug.
So now we are baking it.
These Rescue Roast® Chilli Hot Chocolate Brownies are rich, dense and chocolatey, with just enough chilli to add warmth without overpowering the chocolate.
Think fudgy brownie first.
Then, a few seconds later...
Hello, chilli.
Ingredients
- 150 g butter
- 180 g milk or dark chocolate, roughly chopped
- ¾ cup brown sugar
- 3 large eggs
- ¾ cup cake flour
- ½ cup Rescue Roast® Hot Chocolate powder
- ½ teaspoon ground cinnamon
- A small pinch of chilli powder or cayenne pepper
- 1 teaspoon vanilla essence
- Pinch of salt
- ½ cup chocolate chips or chopped chocolate, optional
For Serving
- Vanilla ice cream
- Whipped cream
- Chocolate sauce
- Fresh raspberries or strawberries
- Chocolate shavings
- Extra Rescue Roast® Hot Chocolate powder for dusting
Method
1. Preheat your oven to 175°C.
2. Line a small square baking tin with baking paper.
3. Place the butter and chopped chocolate into a heatproof bowl.
4. Melt gently in the microwave in short bursts, stirring between each one, until smooth.
5. Allow the mixture to cool slightly.
6. Stir in the brown sugar.
7. Add the eggs one at a time, mixing well after each addition.
8. Stir in the vanilla essence.
9. In a separate bowl, combine the cake flour, Rescue Roast® Hot Chocolate powder, cinnamon, chilli and salt.
10. Fold the dry ingredients gently into the chocolate mixture.
11. Add the chocolate chips or chopped chocolate if using.
12. Pour the mixture into the prepared tin and smooth the top.
13. Bake for approximately 22–28 minutes.
The edges should be set while the centre remains slightly soft and fudgy.
Do not overbake them.
How Much Chilli?
This is the important part.
Chilli powders vary enormously in strength, so start small.
A tiny pinch may be enough.
The goal is not to make spicy brownies.
The goal is to make rich chocolate brownies with a gentle warmth that appears after the chocolate.
Chocolate first. Chilli second.
Make Them Extra Gooey
Fold plenty of chopped chocolate through the batter before baking.
You can also press a few extra chocolate chunks into the top just before the tray goes into the oven.
When served slightly warm, those chocolate pieces become soft and melty.
Chilli Chocolate Brownie Sundae
This may be one of the best ways to serve them.
Warm a brownie slightly and add:
- A generous scoop of vanilla ice cream
- Warm chocolate sauce
- Chocolate shavings
- A few fresh raspberries
The cold vanilla ice cream works beautifully against the warm chocolate and subtle chilli heat.
Orange & Chilli Brownies
Chocolate, orange and chilli work extremely well together.
Add approximately 1 teaspoon of finely grated orange zest to the brownie batter.
The orange brings a fresh citrus note while the chilli adds warmth underneath the chocolate.
Rescue Roast® Mocha Chilli Brownies
If chocolate and chilli were not already enough, coffee can join too.
Add approximately 1 teaspoon of instant espresso powder to the melted chocolate mixture.
Or add a small spoonful of strong brewed Rescue Roast® coffee.
The coffee deepens the chocolate flavour beautifully.
Add a Little Sea Salt
Once baked, sprinkle the brownies with a tiny amount of flaky sea salt.
The salt balances the sweetness and works particularly well with chocolate and chilli.
You only need a little.
