Hot Chocolate Beef Meatballs in Rich Tomato Sauce

We have officially reached the point where Rescue Roast® Hot Chocolate is no longer just a dessert ingredient.

It has moved into dinner.

These Rescue Roast® Hot Chocolate Beef Meatballs are tender, savoury and simmered in a rich tomato sauce with herbs, garlic and a small amount of Hot Chocolate powder.

The chocolate does not make the sauce sweet.

Instead, it helps deepen the tomato flavour, adds richness and gives the finished sauce a darker, fuller character.

Ingredients

For the Meatballs

  • 750 g beef mince
  • 1 small onion, finely grated
  • 2 cloves garlic, crushed
  • ½ cup breadcrumbs
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper to taste
  • 2 tablespoons cooking oil

For the Sauce

  • 1 tablespoon cooking oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, crushed
  • 2 tablespoons tomato paste
  • 2 tins chopped tomatoes
  • 1 cup beef stock
  • 1 tablespoon Rescue Roast® Hot Chocolate powder
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon brown sugar, optional
  • Salt and black pepper to taste

For Serving

  • Spaghetti or your favourite pasta
  • Mashed potatoes
  • Fresh crusty bread
  • Grated Parmesan or mature cheese
  • Fresh parsley or basil

Method

1. Add the beef mince, grated onion, garlic, breadcrumbs, egg, oregano, parsley, Worcestershire sauce, salt and black pepper to a large mixing bowl.

2. Mix gently until everything is combined.

Try not to overwork the meat mixture, as this can make the meatballs firm rather than tender.

3. Roll the mixture into evenly sized meatballs.

You should get approximately 18–22 meatballs, depending on how large you make them.

4. Heat the oil in a large frying pan over medium-high heat.

5. Brown the meatballs in batches.

They do not need to cook through completely at this stage.

You simply want plenty of colour on the outside.

Remove the browned meatballs and set them aside.

Make the Rescue Roast® Tomato Sauce

6. Add another tablespoon of oil to the same pan if necessary.

7. Add the chopped onion and cook until softened.

8. Add the garlic and cook for another 30 seconds.

9. Stir in the tomato paste and cook for approximately 1 minute.

10. Add the chopped tomatoes and beef stock.

11. Stir in the Worcestershire sauce, oregano and basil.

12. Add 1 tablespoon of Rescue Roast® Hot Chocolate powder.

Stir thoroughly until it disappears into the sauce.

13. Bring the sauce to a gentle simmer.

14. Return the meatballs to the pan.

15. Cover loosely and simmer over low heat for approximately 25–30 minutes.

Turn the meatballs occasionally so they cook evenly and absorb the sauce.

Taste Before Serving

Once the meatballs are cooked through, taste the sauce.

Add salt and black pepper as needed.

If your tomatoes are particularly acidic, add approximately 1 teaspoon of brown sugar.

The finished sauce should be rich, savoury and tomato-forward.

The Rescue Roast® Hot Chocolate should add depth without announcing itself.

Why Does Hot Chocolate Work in Tomato Sauce?

A small amount of chocolate can help balance the natural acidity of tomatoes while adding darker roasted flavour notes.

In this dish, Rescue Roast® Hot Chocolate adds:

  • Richer colour
  • Extra depth
  • A fuller sauce
  • A subtle roasted character

The key is moderation.

One tablespoon is enough.

Serve Them with Pasta

Cook your favourite pasta and spoon the meatballs and sauce generously over the top.

Finish with:

  • Fresh basil
  • Parsley
  • Grated Parmesan
  • Black pepper

And make sure there is plenty of sauce.

Meatball Subs

These meatballs also make brilliant toasted sandwiches.

Slice a crusty roll and fill it with:

  • Hot meatballs
  • Plenty of tomato sauce
  • Grated mozzarella or mature cheese

Place under the grill until the cheese is melted and bubbling.

At that point dinner becomes considerably less tidy.

But considerably more enjoyable.

Add Mushrooms

For a richer sauce, add approximately 250 g sliced brown mushrooms after cooking the onions.

Cook until browned before adding the tomato paste.

The earthy mushroom flavour works especially well with the deeper notes from the Hot Chocolate.

Rescue Roast® Coffee & Hot Chocolate Meatballs

If you want to experiment even further, replace approximately ¼ cup of the beef stock with strong brewed Rescue Roast® coffee.

Coffee, tomato, beef and chocolate work together to create a dark, complex sauce.

Neither the coffee nor chocolate should dominate.

They simply add another layer of flavour.

Perfect for Making Ahead

This dish tastes even better after the flavours have had time to develop.

Prepare the meatballs and sauce earlier in the day, then reheat gently before serving.

It is also excellent the next day.

Assuming there is any left.
