Hot Chocolate Biscuit Fridge Cake

Rescue Roast® Hot Chocolate Biscuit Fridge Cake

Crunchy biscuits, creamy chocolate layers, no baking, and dangerously easy to make.

Some desserts earn their place in the recipe book because they are impressive.

Others earn it because they are unbelievably simple and still disappear from the fridge far too quickly.

This Rescue Roast® Hot Chocolate Biscuit Fridge Cake falls very comfortably into the second category.

It combines layers of biscuits with a rich Rescue Roast® Hot Chocolate filling, then chills until everything becomes soft, creamy and sliceable.

No oven. No complicated techniques. Just chocolate and patience.

Ingredients

  • 2 packets plain sweet biscuits
  • 250 ml fresh cream
  • 250 g cream cheese, softened
  • ½ cup icing sugar
  • ½ cup Rescue Roast® Hot Chocolate powder
  • 150 g milk or dark chocolate, melted and slightly cooled
  • 1 teaspoon vanilla essence
  • ½ cup milk for dipping the biscuits

For the Top

  • Chocolate shavings
  • Crushed biscuits
  • Chocolate chips
  • Mini marshmallows
  • Extra Rescue Roast® Hot Chocolate powder for dusting

Method

1. Line a small loaf tin or rectangular dish with baking paper or cling wrap.

This makes the finished fridge cake easier to lift out and slice.

2. In a large mixing bowl, beat the softened cream cheese until smooth.

3. Add the icing sugar, Rescue Roast® Hot Chocolate powder and vanilla essence.

4. Mix until completely smooth.

5. Add the melted chocolate and mix again until fully combined.

6. In a separate bowl, whip the fresh cream until soft peaks form.

7. Gently fold the whipped cream into the chocolate mixture.

Keep the folding gentle so that the filling stays light and creamy.

Build the Layers

8. Pour the milk into a shallow bowl.

9. Dip each biscuit briefly into the milk.

Do not soak them for too long. You want them softened slightly, not falling apart.

10. Arrange a layer of biscuits across the bottom of your prepared dish.

11. Spread a generous layer of the Rescue Roast® chocolate filling over the biscuits.

12. Repeat with another layer of dipped biscuits followed by more chocolate filling.

13. Continue until the dish is full, finishing with a chocolate layer on top.

Into the Fridge

Cover and refrigerate for at least 6 hours.

For the best texture, leave it overnight.

While it chills, the biscuits soften and absorb some of the chocolate filling, creating a cake-like texture without ever going near an oven.

Decorate Before Serving

Just before serving, finish your fridge cake with:

  • Chocolate shavings
  • Crushed biscuits
  • Mini marshmallows
  • Chocolate chips
  • A dusting of Rescue Roast® Hot Chocolate powder

Then slice it into generous portions.

Make It Extra Chocolatey

You can easily add even more chocolate between the layers.

Try:

  • Chocolate chips
  • Thin chocolate pieces
  • Chocolate spread
  • Chocolate biscuit crumbs
  • White chocolate shavings

There is very little chance of anybody accusing this dessert of not containing enough chocolate.

Hot Chocolate & Marshmallow Fridge Cake

Scatter mini marshmallows between the biscuit and chocolate layers.

Add another handful over the top before serving.

The soft marshmallows work beautifully with the creamy filling and give the whole dessert a proper hot-chocolate feel.

Chocolate & Caramel Version

Add a thin drizzle of caramel sauce between each layer.

Chocolate, biscuits and caramel together make this one especially difficult to leave alone once it is sitting in the fridge.

Rescue Roast® Mocha Fridge Cake

For a coffee version, replace approximately ¼ cup of the milk used for dipping with cooled strong Rescue Roast® coffee.

You can also add a small spoonful of strong coffee to the chocolate filling.

The coffee deepens the chocolate flavour and creates a delicious mocha-style fridge cake.

Perfect for Making Ahead

This is an excellent dessert when you are entertaining because it actually needs to be made ahead of time.

Prepare it the night before, leave it in the fridge and decorate shortly before serving.

No last-minute baking.
