This Rescue Roast® Hot Chocolate Brownie Ice Cream Sundae definitely belongs in the second category.

It combines warm, fudgy brownies made with Rescue Roast® Hot Chocolate powder, cold vanilla ice cream, chocolate sauce, whipped cream and all the toppings you feel like adding.

Perfect for birthdays, weekend treats, family dessert nights or any occasion where ordinary dessert simply feels too responsible.

Ingredients

For the Brownies

  • 120 g butter
  • 150 g milk or dark chocolate, roughly chopped
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup cake flour
  • ⅓ cup Rescue Roast® Hot Chocolate powder
  • 1 teaspoon vanilla essence
  • Pinch of salt
  • ½ cup chocolate chips, optional

For the Sundaes

  • Vanilla ice cream
  • Chocolate sauce
  • Whipped cream
  • Chocolate shavings
  • Mini marshmallows
  • Crushed biscuits
  • Fresh strawberries or raspberries
  • Extra Rescue Roast® Hot Chocolate powder for dusting

Method

1. Preheat your oven to 175°C.

2. Line a small square baking tin with baking paper.

3. Add the butter and chopped chocolate to a heatproof bowl.

4. Melt gently in the microwave in short bursts, stirring between each one, until smooth.

5. Allow the mixture to cool slightly.

6. Stir in the brown sugar.

7. Add the eggs one at a time, mixing well after each addition.

8. Add the vanilla essence.

9. Fold in the cake flour, Rescue Roast® Hot Chocolate powder and salt.

10. Fold in the chocolate chips if using.

11. Pour the batter into the prepared tin and smooth the top.

12. Bake for approximately 20–25 minutes.

The edges should be set while the centre remains slightly soft and fudgy.

Do not overbake them.

Now Build the Sundae

Allow the brownies to cool slightly, then cut them into generous squares.

Place one warm brownie into a dessert bowl or sundae glass.

Add one or two scoops of vanilla ice cream.

Drizzle generously with chocolate sauce.

Then add:

  • Whipped cream
  • Chocolate shavings
  • Mini marshmallows
  • Crushed biscuits
  • Fresh berries

Finish with a light dusting of Rescue Roast® Hot Chocolate powder.

The Important Temperature Situation

The brownie should still be slightly warm.

The ice cream should be very cold.

That contrast is what makes the whole thing work.

The ice cream slowly melts into the warm brownie while the chocolate sauce finds its way into every possible gap.

Make It Even More Ridiculous

If you want to turn your sundae into a full dessert event, add:

  • Caramel sauce
  • Chocolate-coated pretzels
  • Peanut butter
  • Chopped toasted nuts
  • Cookie pieces
  • Chocolate truffles
  • Extra brownie chunks

At some point the bowl may become structurally questionable.

That is when you know you are doing it properly.

Hot Chocolate & Marshmallow Sundae

For a proper hot-chocolate-inspired version, add plenty of mini marshmallows over the warm brownie before adding the ice cream.

The heat from the brownie will soften them slightly.

Finish with whipped cream, chocolate sauce and another dusting of Rescue Roast® Hot Chocolate powder.

Chocolate & Peanut Butter Sundae

Warm a spoonful of peanut butter slightly and drizzle it over the brownie before adding the ice cream.

Chocolate, peanut butter and vanilla ice cream together create exactly the sort of dessert that becomes difficult to share.

Rescue Roast® Mocha Brownie Sundae

Add approximately 1 teaspoon of instant espresso powder to the brownie batter.

Or add a small spoonful of strong brewed Rescue Roast® coffee to the melted chocolate mixture.

This gives the brownie a subtle mocha character that works beautifully with vanilla ice cream.

Make the Brownies Ahead

The brownies can be baked ahead and stored in an airtight container.

When you are ready to build your sundae, warm each brownie for a few seconds in the microwave before adding the ice cream.
