If you have a bag of Rescue Roast® Hot Chocolate in the cupboard, you already have the beginning of one seriously decadent dessert.

This Rescue Roast® Hot Chocolate Brownie Pudding is somewhere between a gooey brownie and a self-saucing chocolate pudding, with a soft baked chocolate top and a rich, warm sauce hiding underneath.

It is easy to make, wonderfully indulgent, and the perfect excuse to use your favourite Rescue Roast® Hot Chocolate for something other than drinking.

Ingredients

For the Pudding

  • 1 cup cake flour
  • 2 teaspoons baking powder
  • ½ cup brown sugar
  • ½ cup Rescue Roast® Hot Chocolate powder
  • Pinch of salt
  • ½ cup milk
  • 60 g butter, melted
  • 1 teaspoon vanilla essence
  • 1 large egg

For the Chocolate Sauce

  • ½ cup Rescue Roast® Hot Chocolate powder
  • ½ cup brown sugar
  • 1½ cups boiling water

To Serve

  • Vanilla ice cream
  • Fresh cream
  • Chocolate shavings
  • A light dusting of Rescue Roast® Hot Chocolate powder

Method

1. Preheat your oven to 180°C.

2. Lightly grease a medium-sized ovenproof baking dish.

3. In a large mixing bowl, combine the flour, baking powder, brown sugar, Rescue Roast® Hot Chocolate powder and salt.

4. In a separate jug or bowl, whisk together the milk, melted butter, vanilla essence and egg.

5. Pour the wet ingredients into the dry ingredients and stir gently until just combined.

Try not to overmix the batter.

6. Spread the batter evenly into your prepared baking dish.

Now for the Magic

In a small bowl, mix together the additional Rescue Roast® Hot Chocolate powder and brown sugar.

Sprinkle this mixture evenly over the top of the uncooked pudding batter.

Slowly pour the boiling water over the entire pudding.

Do not stir it.

This may look slightly strange at this stage, but the hot water works its way through the pudding while it bakes and creates the rich chocolate sauce underneath.

Place the dish carefully into the oven and bake for approximately 30–35 minutes.

The top should look baked and brownie-like while the centre remains soft, with a generous amount of chocolate sauce forming underneath.

Allow the pudding to stand for about 5 minutes before serving.

How to Serve Your Hot Chocolate Brownie Pudding

Spoon the warm pudding into bowls, making sure you scoop up plenty of the chocolate sauce hiding underneath.

Add a generous scoop of vanilla ice cream and allow it to slowly melt over the warm chocolate pudding.

Finish it off with chocolate shavings, a little fresh cream, or a light dusting of Rescue Roast® Hot Chocolate powder.

Then all that is left to do is find a spoon.

Turn It Into a Rescue Roast® Mocha Brownie Pudding

Coffee lovers can easily transform this dessert into a delicious mocha version.

Simply replace approximately ½ cup of the boiling water with freshly brewed Rescue Roast® coffee.

The coffee deepens the chocolate flavour beautifully without overpowering the dessert.

Rescue Roast® Hot Chocolate is available in both 250 g and 500 g bags.
