Rescue Roast® Hot Chocolate Chia Pudding
Rich, creamy, chocolatey and ridiculously easy to prepare.
If you like the idea of a dessert-style breakfast that practically makes itself, this Rescue Roast® Hot Chocolate Chia Pudding deserves a place in your fridge.
It takes only a few minutes to mix together, then the chia seeds do the rest while it chills.
The result is a thick, creamy chocolate pudding that works beautifully for breakfast, an afternoon snack, meal prep or even dessert.
Ingredients
- 3 tablespoons chia seeds
- 2 tablespoons Rescue Roast® Hot Chocolate powder
- 1 cup milk
- 1 teaspoon honey or maple syrup, optional
- ½ teaspoon vanilla essence
- Pinch of salt
For Serving
- Fresh strawberries
- Banana slices
- Blueberries
- Chocolate chips
- Chopped nuts
- Granola
- Whipped cream
- Extra Rescue Roast® Hot Chocolate powder for dusting
Method
1. Add the chia seeds, Rescue Roast® Hot Chocolate powder and salt to a bowl or jar.
2. Pour in the milk, honey or maple syrup, and vanilla essence.
3. Stir everything together thoroughly.
4. Allow the mixture to stand for about 5 minutes, then stir it again.
This second stir is important because it helps prevent the chia seeds from settling into clumps.
5. Cover and refrigerate for at least 4 hours, or preferably overnight.
6. Stir before serving.
If the pudding is thicker than you like, simply add a splash of milk and mix again.
Make It Look Beautiful
Serve the chia pudding in a clear glass or jar and layer it with your favourite toppings.

- Sliced strawberries
- Banana
- Blueberries
- Chocolate chips
- Chopped hazelnuts
- Granola
- A spoonful of yoghurt
A light dusting of Rescue Roast® Hot Chocolate powder over the top finishes it off beautifully.
Chocolate & Peanut Butter Chia Pudding
For a richer version, stir approximately 1 tablespoon of peanut butter into the mixture before chilling.
Top it with banana slices and a few chocolate chips before serving.
Chocolate, banana and peanut butter are rarely a bad idea.
Rescue Roast® Mocha Chia Pudding
For the coffee lovers, replace approximately ¼ cup of the milk with cooled, strong Rescue Roast® coffee.
This gives the pudding a subtle mocha flavour and works especially well with chocolate chips or chopped dark chocolate on top.
Make It Dessert
This recipe sits very comfortably somewhere between breakfast and dessert.
If you want to push it firmly into dessert territory, add:
- Whipped cream
- Chocolate shavings
- Crushed chocolate biscuits
- Mini marshmallows
- Chocolate sauce
At that point, calling it breakfast may require a little creativity.
We are fine with that.
Perfect for Meal Prep
Chia pudding is ideal for preparing ahead.
Make several jars at once and keep them chilled so you have an easy breakfast or snack ready to go.
Add fresh fruit and crunchy toppings just before serving so that they stay fresh.
250 g or 500 g?
Rescue Roast® Hot Chocolate is available in both 250 g and 500 g bags.
The 250 g bag is perfect for mugs of hot chocolate and the occasional Rescue Roast® Academy recipe.
But if Hot Chocolate has become a permanent member of your breakfast, baking and dessert cupboard, the 500 g bag is probably going to disappear surprisingly quickly too.
