Hot Chocolate Crinkle Cookies

Rescue Roast® Hot Chocolate Crinkle Cookies

Soft in the centre, slightly crisp on the outside, beautifully chocolatey, and covered in those irresistible crackled icing-sugar tops.

If you are looking for a chocolate cookie that looks impressive but is still surprisingly easy to make, these Rescue Roast® Hot Chocolate Crinkle Cookies are a very good place to start.

They are rich, fudgy and packed with chocolate flavour, with Rescue Roast® Hot Chocolate powder mixed directly into the dough.

They are perfect for weekend baking, coffee tables, gift boxes, office treats, or simply keeping in a container somewhere nobody else knows about.

Ingredients

  • 1 cup cake flour
  • ½ cup Rescue Roast® Hot Chocolate powder
  • 1 teaspoon baking powder
  • Pinch of salt
  • ½ cup brown sugar
  • ¼ cup white sugar
  • 60 g butter, melted and slightly cooled
  • 2 large eggs
  • 1 teaspoon vanilla essence
  • ½ cup chocolate chips or chopped chocolate, optional
  • ½ cup icing sugar, for coating

Method

1. In a medium-sized bowl, combine the cake flour, Rescue Roast® Hot Chocolate powder, baking powder and salt.

2. In a separate large mixing bowl, combine the brown sugar, white sugar and melted butter.

3. Add the eggs one at a time, mixing well after each addition.

4. Stir in the vanilla essence.

5. Gradually add the dry ingredients to the wet ingredients and mix until a thick chocolate dough forms.

6. If you are using chocolate chips or chopped chocolate, gently fold them into the dough.

7. Cover the bowl and refrigerate the dough for approximately 1 hour.

This chilling step is important because it makes the dough much easier to handle and helps create the beautiful crinkled appearance when the cookies bake.

Time to Crinkle

Preheat your oven to 180°C.

Line a baking tray with baking paper.

Place the icing sugar into a small bowl.

Scoop approximately one tablespoon of chilled dough at a time and roll it between your hands to form a ball.

Roll each dough ball generously in the icing sugar until it is completely coated.

Do not be shy with the icing sugar.

A generous coating helps create those dramatic white cracks across the surface as the cookies expand in the oven.

Place the coated dough balls onto your prepared baking tray, leaving enough space between them to spread.

Bake for approximately 10–12 minutes.

The edges should be set, but the centres should still feel slightly soft.

Allow the cookies to cool on the baking tray for around 5 minutes before transferring them to a cooling rack.

The Secret to Soft Crinkle Cookies

Do not overbake them.

The cookies will continue to firm up slightly as they cool.

Removing them from the oven while the centres are still a little soft is what helps give them that delicious fudgy texture.

If you wait until they feel completely firm in the oven, you may end up with crunchier cookies.

Still delicious.

Just slightly less gooey.

Make Them Even More Chocolatey

You can easily customise your Rescue Roast® Hot Chocolate Crinkle Cookies by adding:

  • Milk chocolate chips
  • Dark chocolate chunks
  • White chocolate chips
  • Chopped toasted hazelnuts
  • Mini marshmallow pieces
  • A little peanut butter
  • A pinch of cinnamon

For an extra indulgent version, press a small piece of chocolate into the centre of each dough ball before rolling it in icing sugar.

When the cookies are served warm, the chocolate in the middle will be beautifully soft and melty.

Rescue Roast® Mocha Crinkle Cookies

Of course, there is also a Rescue Roast® coffee version.

Add approximately 1 teaspoon of instant espresso powder to the dough, or a very small amount of strong brewed Rescue Roast® coffee.

Coffee naturally deepens chocolate flavour, turning these into delicious mocha-style crinkle cookies.

They are particularly good alongside a freshly brewed cup of Rescue Roast® coffee.
