Hot Chocolate Doughnuts

Rescue Roast® Hot Chocolate Doughnuts

Soft, chocolatey, oven-baked doughnuts finished with a silky Rescue Roast® Hot Chocolate glaze.

We have already turned Rescue Roast® Hot Chocolate into cakes, puddings, cookies, waffles, truffles and frozen treats.

So naturally, doughnuts were going to happen eventually.

These Rescue Roast® Hot Chocolate Doughnuts are soft, fluffy and baked in the oven rather than fried, which makes them wonderfully easy to prepare at home.

Then we cover them in a glossy chocolate glaze because there is absolutely no reason to stop halfway.

Ingredients

For the Doughnuts

  • 1½ cups cake flour
  • ½ cup Rescue Roast® Hot Chocolate powder
  • ½ cup brown sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon bicarbonate of soda
  • Pinch of salt
  • 1 large egg
  • ¾ cup milk
  • 60 g butter, melted and slightly cooled
  • 1 teaspoon vanilla essence

For the Rescue Roast® Hot Chocolate Glaze

  • 1 cup icing sugar
  • 3 tablespoons Rescue Roast® Hot Chocolate powder
  • 2–3 tablespoons milk
  • ½ teaspoon vanilla essence

For Decorating

  • Chocolate sprinkles
  • Chocolate shavings
  • Mini marshmallows
  • Chopped nuts
  • Crushed biscuits
  • Extra Rescue Roast® Hot Chocolate powder for dusting

Method

1. Preheat your oven to 180°C.

2. Lightly grease a doughnut baking tray.

3. In a large mixing bowl, combine the cake flour, Rescue Roast® Hot Chocolate powder, brown sugar, baking powder, bicarbonate of soda and salt.

4. In a separate bowl or jug, whisk together the egg, milk, melted butter and vanilla essence.

5. Pour the wet ingredients into the dry ingredients.

6. Stir gently until just combined.

Do not overmix the batter. A gentle hand helps keep the finished doughnuts soft and fluffy.

7. Spoon the mixture into the prepared doughnut tray, filling each cavity approximately three-quarters full.

A piping bag or large zip-lock bag with one corner snipped off makes this especially easy.

8. Bake for approximately 10–12 minutes, or until the doughnuts spring back lightly when touched.

9. Allow them to cool in the tray for about 5 minutes before transferring them to a cooling rack.

Allow them to cool completely before glazing.

Make the Rescue Roast® Hot Chocolate Glaze

Add the icing sugar and Rescue Roast® Hot Chocolate powder to a small bowl.

Add the milk one tablespoon at a time, stirring until you have a smooth, thick glaze.

Add the vanilla essence and mix again.

The glaze should be thick enough to cling to the doughnuts but still soft enough for dipping.

Time to Dip

Once the doughnuts have cooled completely, dip the top of each one into the Rescue Roast® Hot Chocolate glaze.

Lift it gently and allow the excess glaze to drip back into the bowl.

Place the doughnut onto a cooling rack and decorate while the glaze is still wet.

  • Chocolate sprinkles
  • Mini marshmallows
  • Chocolate curls
  • Chopped hazelnuts
  • Crushed biscuits

Make Them Proper Hot Chocolate Doughnuts

For a fun hot-chocolate-inspired version, top each glazed doughnut with a few mini marshmallows and a light dusting of Rescue Roast® Hot Chocolate powder.

You can even drizzle a little melted chocolate over the top.

At that stage the doughnut is making absolutely no attempt to behave.

Exactly as intended.

Chocolate-Filled Doughnuts

If you have a doughnut mould that allows for thicker baked doughnuts, you can take things one step further.

Once baked and cooled, make a small opening in the side and pipe in:

  • Chocolate spread
  • Chocolate ganache
  • Caramel
  • Peanut butter

Then glaze as normal.

Rescue Roast® Mocha Doughnuts

For a subtle coffee flavour, replace approximately ¼ cup of the milk in the doughnut batter with cooled strong Rescue Roast® coffee.

You can also add a teaspoon of instant espresso powder to the glaze.

The combination of coffee and Rescue Roast® Hot Chocolate creates a delicious mocha-style doughnut.

No Doughnut Tray?

If you do not have a doughnut baking tray, do not abandon the recipe.

You can bake the same mixture in a muffin tray instead.

You will technically have chocolate muffins rather than doughnuts.

But once they are covered in Rescue Roast® Hot Chocolate glaze, we doubt anyone will complain.

These doughnuts are brilliant for:

Arrange a pile of different toppings and allow everyone to decorate their own.

It becomes considerably more fun once sprinkles are involved.

How to Store Them

Store the baked doughnuts in an airtight container once completely cooled.

They are best enjoyed fresh, particularly after glazing.

If you are preparing them ahead, bake the doughnuts first and add the glaze shortly before serving.

250 g or 500 g?

Rescue Roast® Hot Chocolate is available in both 250 g and 500 g bags.

The 250 g bag is perfect for drinking and experimenting with a few Rescue Roast® Academy recipes.

But when Hot Chocolate has started finding its way into doughnuts, waffles, muffins, mousse and half the dessert cupboard...

The 500 g bag starts looking like rather sensible planning.
