Rescue Roast® Hot Chocolate French Crêpes
Thin, soft, chocolatey and perfect for folding around all the good stuff.
We have done pancakes.
We have done waffles.
So naturally, it was only a matter of time before Rescue Roast® Hot Chocolate found its way into crêpes.
These Rescue Roast® Hot Chocolate French Crêpes are soft, delicate and beautifully chocolatey, making them perfect for breakfast, brunch, dessert or any excuse to cover something in chocolate sauce.
Ingredients
- 1 cup cake flour
- ¼ cup Rescue Roast® Hot Chocolate powder
- 2 tablespoons sugar
- Pinch of salt
- 2 large eggs
- 1½ cups milk
- 2 tablespoons melted butter
- 1 teaspoon vanilla essence
- Extra butter for the pan
For Serving
- Fresh strawberries
- Banana slices
- Whipped cream
- Chocolate sauce
- Chocolate spread
- Vanilla ice cream
- Chocolate shavings
- Icing sugar
- Extra Rescue Roast® Hot Chocolate powder for dusting
Method
1. Add the cake flour, Rescue Roast® Hot Chocolate powder, sugar and salt to a large mixing bowl.
2. In a separate jug, whisk together the eggs, milk, melted butter and vanilla essence.
3. Slowly pour the wet ingredients into the dry ingredients while whisking.
4. Continue whisking until you have a smooth, thin batter.
If you have a few small lumps, do not panic. You can pass the batter through a sieve if you want it perfectly smooth.
5. Allow the batter to rest for approximately 15–20 minutes.
This helps the flour absorb the liquid and gives the finished crêpes a softer texture.
Time to Cook
6. Heat a non-stick frying pan over medium heat.
7. Add a very small amount of butter and swirl it around the pan.
8. Pour in just enough batter to lightly coat the bottom of the pan.
Immediately tilt and rotate the pan so the batter spreads into a thin, even layer.
9. Cook for approximately 1 minute, or until the edges begin to lift and the underside is cooked.
10. Flip carefully and cook the other side for another 20–30 seconds.
11. Transfer to a plate and repeat with the remaining batter.
Now Fill Them
This is where the crêpes become considerably more interesting.
Try filling them with:
- Chocolate spread and banana
- Strawberries and whipped cream
- Peanut butter and banana
- Vanilla ice cream and chocolate sauce
- Fresh berries and chocolate shavings
Fold each crêpe into quarters or roll it up around the filling.
Then finish with icing sugar, chocolate drizzle or a dusting of Rescue Roast® Hot Chocolate powder.
Chocolate & Banana Crêpes
Spread a warm crêpe with chocolate spread.
Add a few banana slices and fold it into quarters.
Drizzle with chocolate sauce and finish with a little Rescue Roast® Hot Chocolate powder.
Simple.
Dangerously effective.
Hot Chocolate & Marshmallow Crêpes
Add mini marshmallows and chocolate chips to one half of the crêpe while it is still warm.
Fold it over and allow the heat to soften the marshmallows and chocolate.
Add whipped cream and chocolate sauce just before serving.
Rescue Roast® Mocha Crêpes
For a coffee twist, replace approximately ¼ cup of the milk with strong brewed Rescue Roast® coffee.
The coffee deepens the chocolate flavour and creates a subtle mocha crêpe.
Serve with chocolate sauce and a fresh Rescue Roast® coffee on the side.
Turn Them Into Dessert
For dessert, stack or fold the crêpes and serve them warm with:
- Vanilla ice cream
- Chocolate sauce
- Fresh berries
- Whipped cream
- Chocolate shavings
You can even layer several crêpes with chocolate cream between them to create a simple crêpe cake.
Make Them Ahead
Crêpes are great for preparing in advance.
Once cooked and cooled, stack them with pieces of baking paper between the layers.
Cover and refrigerate until needed.
Warm them gently in a pan or microwave before filling and serving.
