Hot Chocolate Fudge

Rescue Roast® Hot Chocolate Fudge

Rich, creamy, chocolatey and almost suspiciously easy to make.

Some recipes need a long ingredient list, complicated techniques and half the kitchen covered in flour.

This is not one of those recipes.

Rescue Roast® Hot Chocolate Fudge is simple, indulgent and perfect for cutting into little squares for gifts, coffee tables, lunchbox treats or emergency chocolate situations.

And because it uses Rescue Roast® Hot Chocolate powder, it is another very good reason to keep a bag permanently stocked in the cupboard.

Ingredients

  • 400 g milk chocolate or dark chocolate, roughly chopped
  • 1 tin sweetened condensed milk, approximately 385 g
  • ¼ cup Rescue Roast® Hot Chocolate powder
  • 30 g butter
  • 1 teaspoon vanilla essence
  • Pinch of salt

Optional Extras

  • Mini marshmallows
  • Chopped toasted nuts
  • Chocolate chips
  • Crushed biscuits
  • Caramel pieces
  • Sea salt flakes
  • Extra Rescue Roast® Hot Chocolate powder for dusting

Method

1. Line a small square baking tin or dish with baking paper.

2. Add the chopped chocolate, condensed milk and butter to a saucepan.

3. Heat gently over low heat, stirring continuously until the chocolate has completely melted and the mixture is smooth.

Keep the heat low. Chocolate prefers patience.

4. Remove the saucepan from the heat.

5. Add the Rescue Roast® Hot Chocolate powder, vanilla essence and a pinch of salt.

6. Stir until everything is completely combined and glossy.

7. If you are adding nuts, marshmallows, biscuits or chocolate chips, gently fold them through the mixture now.

8. Spoon the fudge mixture into the prepared tin and spread it evenly.

9. Add any extra toppings while the mixture is still soft.

10. Refrigerate for approximately 3–4 hours, or until completely firm.

11. Lift the fudge from the tin and cut it into small squares.

Do Not Make the Squares Too Big

This fudge is rich.

Very rich.

Cutting it into smaller squares gives you the perfect little chocolate bite.

Of course, there is absolutely nothing stopping you from cutting enormous pieces.

That is between you and the fudge.

Hot Chocolate Marshmallow Fudge

For a proper hot-chocolate-inspired version, allow the melted mixture to cool slightly before folding through approximately ¾ cup mini marshmallows.

Sprinkle a few extra marshmallows over the top before chilling.

You will end up with little soft marshmallow pockets running through the chocolate fudge.

Chocolate Biscuit Fudge

Break a handful of plain or chocolate biscuits into rough pieces and fold them into the mixture.

The combination of creamy fudge and crunchy biscuit works ridiculously well.

Add marshmallows too and you are beginning to wander into rocky-road territory.

We are not going to stop you.

Rescue Roast® Mocha Fudge

For a coffee twist, add approximately 1 teaspoon of instant espresso powder to the fudge mixture with the Rescue Roast® Hot Chocolate powder.

The coffee intensifies the chocolate flavour and adds a subtle mocha finish.

Serve a little square alongside a cup of freshly brewed Rescue Roast® coffee and you have a very respectable coffee break.

Add a Little Salt

If you enjoy sweet-and-salty flavours, sprinkle a few sea salt flakes over the top before refrigerating.

You only need a little.

The salt balances the sweetness and makes the chocolate flavour stand out even more.

Once chilled and cut into neat little squares, Rescue Roast® Hot Chocolate Fudge makes a fantastic homemade gift.

Pop a few pieces into a small box or clear bag and you have an easy treat for:

This is important.

How to Store It

Keep your fudge in an airtight container in the refrigerator.

It can be served straight from the fridge for a firmer texture, or allowed to sit at room temperature for a few minutes if you prefer it slightly softer and creamier.

250 g or 500 g?

Rescue Roast® Hot Chocolate is available in both 250 g and 500 g bags.

The 250 g bag is perfect for enjoying as a traditional hot chocolate and trying a few Rescue Roast® Academy recipes.

But once Hot Chocolate starts becoming fudge, rocky road, cakes, puddings, milkshakes, cookies and breakfast...

That 500 g bag starts looking increasingly sensible.

Another Reason Not to Just Drink It

We may have started this recipe collection with hot chocolate in a mug.

Things have clearly escalated.
