Hot Chocolate Mousse

Light, creamy, chocolatey and ridiculously easy to fall in love with.

After turning Rescue Roast® Hot Chocolate into cakes, cookies, puddings, truffles and all sorts of other delicious things, it felt only right to make something a little softer and silkier.

Enter the Rescue Roast® Hot Chocolate Mousse.

This dessert is rich enough to feel indulgent, but light enough that you somehow still find room for the last spoonful.

It is also perfect for preparing ahead, which makes it ideal for dinner parties, family get-togethers or those evenings when dessert needs to look impressive without creating a mountain of washing up.

Ingredients

  • 200 g milk or dark chocolate, roughly chopped
  • 3 tablespoons Rescue Roast® Hot Chocolate powder
  • 250 ml fresh whipping cream
  • 2 tablespoons icing sugar
  • 1 teaspoon vanilla essence
  • Pinch of salt

For Serving

  • Whipped cream
  • Chocolate shavings
  • Fresh strawberries or raspberries
  • Mini marshmallows
  • Crushed chocolate biscuits
  • Extra Rescue Roast® Hot Chocolate powder for dusting

Method

1. Place the chopped chocolate into a heatproof bowl.

2. Heat approximately 100 ml of the fresh cream in a small saucepan until it is hot and just beginning to steam.

Do not allow it to boil vigorously.

3. Pour the hot cream over the chopped chocolate.

4. Leave it untouched for approximately 2 minutes.

5. Stir gently until the chocolate has completely melted and the mixture is smooth and glossy.

6. Add the Rescue Roast® Hot Chocolate powder, vanilla essence and a small pinch of salt.

7. Stir until completely combined, then allow the chocolate mixture to cool to room temperature.

Make It Light and Fluffy

8. Add the remaining fresh cream and icing sugar to a separate mixing bowl.

9. Whip until soft peaks form.

Be careful not to overwhip the cream. You want it soft and fluffy rather than stiff.

10. Add approximately one third of the whipped cream to the cooled chocolate mixture and stir gently.

11. Fold in the remaining whipped cream in two additions.

Use a gentle folding motion so that you keep as much air in the mixture as possible.

12. Spoon or pipe the mousse into individual glasses, jars or dessert bowls.

13. Refrigerate for at least 2–3 hours, or until chilled and set.

Time for the Toppings

Just before serving, decorate your Rescue Roast® Hot Chocolate Mousse with your favourite toppings.

Try:

  • A swirl of whipped cream
  • Chocolate curls
  • Fresh berries
  • Mini marshmallows
  • Crushed biscuits
  • A light dusting of Rescue Roast® Hot Chocolate powder

Or use several at once.

There is absolutely no reason mousse needs to be restrained.

Make It Extra Chocolatey

If you want an even richer chocolate mousse, use dark chocolate and increase the Rescue Roast® Hot Chocolate powder slightly.

You can also fold a handful of finely chopped chocolate through the mousse before chilling.

This gives you little chocolate pieces hidden inside the soft mousse.

Rescue Roast® Mocha Mousse

Coffee and chocolate were always going to meet again.

Add approximately 1 teaspoon of instant espresso powder to the hot cream before pouring it over the chocolate.

Alternatively, add a small spoonful of very strong Rescue Roast® coffee to the melted chocolate mixture.

The result is a beautifully rich mocha mousse that works especially well after dinner.

Hot Chocolate & Marshmallow Mousse

For a proper hot-chocolate-inspired version, top each mousse with whipped cream and a handful of mini marshmallows.

Add chocolate shavings and a light sprinkle of Rescue Roast® Hot Chocolate powder.

It basically becomes a mug of hot chocolate that decided to dress up for dinner.

Make It Ahead

This is a fantastic dessert for entertaining because it can be prepared the day before.

Simply make the mousse, divide it between your serving glasses and refrigerate overnight.

Add the toppings shortly before serving.

No last-minute baking.

No frantic kitchen activity.

Just open the fridge and pretend everything was effortless.

Perfect for Individual Desserts

Serve the mousse in small clear glasses or jars so that everyone gets their own portion.

You can even create layers by adding crushed chocolate biscuits to the bottom of each glass before spooning over the mousse.

Add another layer of mousse, some whipped cream and chocolate shavings and suddenly it looks remarkably fancy.
