Hot Chocolate Mug Cake

Rescue Roast® Hot Chocolate Mug Cake

A warm chocolate cake, made in a mug, ready in minutes.

Sometimes you want chocolate cake.

But sometimes you do not want to bake an entire chocolate cake.

That is where the Rescue Roast® Hot Chocolate Mug Cake comes in.

This ridiculously easy little dessert is rich, chocolatey, comforting and ready in just a few minutes. Better yet, it uses Rescue Roast® Hot Chocolate powder, making it another delicious way to enjoy your favourite hot chocolate beyond the mug.

Ingredients

  • 4 tablespoons cake flour
  • 2 tablespoons Rescue Roast® Hot Chocolate powder
  • 2 tablespoons brown sugar
  • ¼ teaspoon baking powder
  • Pinch of salt
  • 3 tablespoons milk
  • 2 tablespoons melted butter or neutral cooking oil
  • ¼ teaspoon vanilla essence
  • 1 tablespoon chocolate chips or chopped chocolate, optional

Method

1. Choose a large microwave-safe mug. Make sure there is enough space for the cake to rise while cooking.

2. Add the flour, Rescue Roast® Hot Chocolate powder, brown sugar, baking powder and salt directly into the mug.

3. Mix the dry ingredients together thoroughly.

4. Add the milk, melted butter or oil, and vanilla essence.

5. Stir everything together until you have a smooth batter with no pockets of dry flour remaining.

6. If you are using chocolate chips or chopped chocolate, gently stir them into the mixture.

7. Microwave on high for approximately 60–90 seconds.

Microwave ovens differ considerably, so start checking your mug cake at around 60 seconds.

The cake should have risen and the top should look cooked, while the middle can remain slightly soft and fudgy.

Allow it to stand for approximately 1 minute before digging in.

This improves the texture and, more importantly, gives the molten chocolate a moment to stop trying to remove the roof of your mouth.

The Rescue Roast® Upgrade

The cake is delicious on its own, but this is where you can turn it into something seriously indulgent.

Try topping your warm mug cake with:

  • Vanilla ice cream
  • Whipped cream
  • Mini marshmallows
  • Chocolate shavings
  • Crushed biscuits
  • Caramel sauce
  • Peanut butter
  • A dusting of Rescue Roast® Hot Chocolate powder

For maximum chocolate happiness, add a scoop of vanilla ice cream while the cake is still warm and allow it to slowly melt into the chocolate.

Make It Molten

If you prefer your desserts on the seriously gooey side, there is an easy trick.

Once you have mixed the batter, push one or two blocks of chocolate into the centre.

Do not stir them in.

Microwave the cake as normal.

As the cake cooks, the chocolate melts and creates a warm, molten chocolate centre.

That is the sort of kitchen science we strongly approve of.

Make It a Rescue Roast® Mocha Mug Cake

Coffee and chocolate are a combination that simply makes sense.

For a delicious mocha version, add approximately 1 teaspoon of strong brewed Rescue Roast® coffee or espresso to your mug cake batter.

The coffee helps deepen the chocolate flavour while adding just enough coffee character to turn your dessert into a proper little mocha treat.
