Rescue Roast® Hot Chocolate No-Bake Cheesecake Cups
Creamy, chocolatey, ridiculously easy to make — and absolutely no oven required.
If you love cheesecake and Rescue Roast® Hot Chocolate, this recipe brings the two together in one seriously indulgent little dessert.
These individual no-bake cheesecake cups have a crunchy chocolate biscuit base, a smooth and creamy chocolate cheesecake filling, and plenty of room for all the toppings your heart desires.
They are perfect for dinner parties, family get-togethers, special occasions, or simply making the fridge a much more exciting place.
Ingredients
For the Biscuit Base
- 200 g chocolate biscuits
- 80 g butter, melted
For the Cheesecake Filling
- 250 g cream cheese, softened
- ½ cup icing sugar
- ½ cup Rescue Roast® Hot Chocolate powder
- 1 teaspoon vanilla essence
- 250 ml fresh cream
- 100 g chocolate, melted and slightly cooled
For Serving
- Whipped cream
- Chocolate shavings
- Mini marshmallows
- Crushed chocolate biscuits
- Chocolate chips
- Extra Rescue Roast® Hot Chocolate powder for dusting
Method
1. Crush the chocolate biscuits until they resemble fine crumbs.
2. Add the melted butter and mix until all the biscuit crumbs are evenly coated.
3. Divide the biscuit mixture between small glasses, jars or dessert bowls.
4. Press the mixture down gently with the back of a spoon to create a firm biscuit base.
5. Place the prepared bases in the fridge while you make the cheesecake filling.
Make the Rescue Roast® Chocolate Cheesecake Filling
In a large mixing bowl, beat together the softened cream cheese, icing sugar, Rescue Roast® Hot Chocolate powder and vanilla essence until smooth and creamy.
Add the melted chocolate and mix again until completely combined.
In a separate bowl, whip the fresh cream until soft peaks form.
Gently fold the whipped cream into the chocolate cheesecake mixture.
Try not to overmix it. Keeping some of the air in the whipped cream helps give the cheesecake filling a lighter, creamier texture.
Assemble Your Cheesecake Cups
Spoon or pipe the chocolate cheesecake filling over the chilled biscuit bases.
Smooth the tops and place the desserts back into the refrigerator.
Chill for at least 3–4 hours.
For an even better texture, prepare them the night before and leave them in the fridge overnight.
Now for the Fun Part
Just before serving, decorate your Rescue Roast® Hot Chocolate Cheesecake Cups with any combination of:
- Whipped cream
- Chocolate curls
- Mini marshmallows
- Crushed chocolate biscuits
- Chocolate chips
- Fresh berries
- A light dusting of Rescue Roast® Hot Chocolate powder
You can keep them beautifully simple or pile everything on top and turn them into a full-blown chocolate situation.

Make Them Even More Indulgent
There are plenty of ways to customise this recipe.
Try adding a spoonful of caramel sauce between the biscuit base and cheesecake layer.
You could also add peanut butter to the cheesecake filling for a chocolate and peanut butter version.
Or fold a handful of chopped chocolate through the mixture before chilling for little pockets of chocolate throughout every spoonful.
Rescue Roast® Mocha Cheesecake Cups
Coffee lovers can easily turn this into a mocha dessert.
Add approximately 1–2 teaspoons of very strong Rescue Roast® coffee or espresso to the cheesecake filling.
The coffee helps deepen the chocolate flavour while adding a subtle mocha character.
Serve it alongside a freshly brewed cup of Rescue Roast® coffee and dessert is officially sorted.
Make One Big Cheesecake Instead
If you would rather make one large dessert instead of individual portions, this recipe works beautifully as a full cheesecake too.
Press the biscuit mixture into the base of a small springform cake tin.
Spread the chocolate cheesecake filling evenly over the top and refrigerate until completely firm.
Decorate just before serving, then slice and serve like a traditional cheesecake.
Why We Love This Recipe
There is no oven.
You can prepare it well in advance.

250 g or 500 g?
Rescue Roast® Hot Chocolate is available in both 250 g and 500 g bags.
The 250 g bag is ideal for enjoying your favourite hot chocolate and doing a little occasional baking.
But if you are working your way through the Rescue Roast® Academy Hot Chocolate recipe collection, the 500 g bag may start making considerably more sense.
Because apparently we have now decided that Rescue Roast® Hot Chocolate belongs in puddings, cakes, cookies, cheesecakes and pretty much anything else we can think of.
And we are perfectly comfortable with that.
