Rescue Roast® Hot Chocolate Pancakes
Fluffy, chocolatey, easy to make and dangerously good with a little extra chocolate on top.
Breakfast is already one of the best parts of the day.
Add Rescue Roast® Hot Chocolate to the equation and things improve considerably.
These Rescue Roast® Hot Chocolate Pancakes are soft, fluffy and packed with rich chocolate flavour. They are perfect for lazy weekends, birthday breakfasts, brunch with friends, or those mornings when plain pancakes simply will not do.
Best of all, they are simple to make and use ingredients you probably already have in the cupboard.
Ingredients
- 1½ cups cake flour
- ½ cup Rescue Roast® Hot Chocolate powder
- 2 tablespoons sugar
- 2 teaspoons baking powder
- ½ teaspoon bicarbonate of soda
- Pinch of salt
- 2 large eggs
- 1¼ cups milk
- 2 tablespoons melted butter
- 1 teaspoon vanilla essence
- ½ cup chocolate chips, optional
For Serving
- Fresh berries
- Banana slices
- Whipped cream
- Vanilla ice cream
- Chocolate sauce
- Maple syrup or honey
- Chocolate shavings
- A light dusting of Rescue Roast® Hot Chocolate powder
Method
1. In a large mixing bowl, combine the cake flour, Rescue Roast® Hot Chocolate powder, sugar, baking powder, bicarbonate of soda and salt.
2. In a separate bowl or jug, whisk together the eggs, milk, melted butter and vanilla essence.
3. Pour the wet ingredients into the dry ingredients.
4. Stir gently until just combined.
Do not overmix the batter. A few small lumps are perfectly fine and actually help keep the pancakes soft and fluffy.
5. If you are using chocolate chips, fold them gently into the batter.
6. Heat a lightly greased non-stick frying pan over medium heat.
7. Spoon approximately ¼ cup of batter into the pan for each pancake.
8. Cook until small bubbles begin to appear on the surface and the edges start to look set.
9. Flip carefully and cook the other side for another minute or two.
Continue until all the batter has been used.
Stack Them High
Now comes the important part.
Stack your warm Rescue Roast® Hot Chocolate Pancakes onto a plate and add your favourite toppings.
A simple combination of banana slices, chocolate sauce and whipped cream works beautifully.
Or go completely over the top with vanilla ice cream, chocolate shavings and a generous drizzle of chocolate sauce.

Make Them Extra Chocolatey
If normal chocolate pancakes are simply not enough chocolate for you, try adding:
- Milk chocolate chips
- Dark chocolate chunks
- White chocolate chips
- Chopped hazelnuts
- Mini marshmallows
- Peanut butter
- Caramel sauce
You can also sprinkle a few chocolate chips onto each pancake immediately after pouring the batter into the pan.

Want to bring coffee into breakfast too?
Replace approximately ¼ cup of the milk with strong brewed Rescue Roast® coffee.
The coffee adds a subtle mocha character while helping deepen the chocolate flavour.
Serve them with a freshly brewed cup of Rescue Roast® coffee and you have a breakfast combination we can strongly recommend.
Turn Them Into a Dessert
These pancakes are perfectly acceptable at breakfast.
But nobody said they had to stay there.
Stack two or three pancakes, add a scoop of vanilla ice cream, pour warm chocolate sauce over the top and finish with crushed biscuits or chocolate shavings.
At that point they are no longer breakfast.
They are dessert.
And that is absolutely fine.
Perfect for a Weekend Breakfast
One of the best things about this recipe is how easy it is to customise.
Place a few bowls of toppings on the table and let everyone build their own pancake stack.

- Banana
- Mini marshmallows
- Chocolate chips
- Whipped cream
- Peanut butter
- Chocolate sauce
It makes a fun breakfast for families and a very easy option when you have guests.
250 g or 500 g?
Rescue Roast® Hot Chocolate is available in both 250 g and 500 g bags.
The 250 g bag is perfect for enjoying your favourite hot chocolate and experimenting with the occasional recipe.
But if hot chocolate pancakes are about to become a regular weekend occurrence, the 500 g bag may be the more sensible option.
