Rescue Roast® Hot Chocolate Rocky Road Fridge Slice
Chocolatey, chewy, crunchy, ridiculously easy — and absolutely no baking required.
Some recipes are impressive because they take hours.
This one is impressive because it looks like you spent far more effort on it than you actually did.
Our Rescue Roast® Hot Chocolate Rocky Road Fridge Slice combines chocolate, biscuits, marshmallows and Rescue Roast® Hot Chocolate powder into one gloriously indulgent no-bake treat.
It is perfect for parties, lunchboxes, coffee tables, gifts, weekend treats or those emergency situations where chocolate is clearly the only reasonable solution.
Ingredients
- 250 g plain sweet biscuits
- 200 g milk or dark chocolate
- 100 g butter
- ⅓ cup Rescue Roast® Hot Chocolate powder
- 2 tablespoons golden syrup
- 1 cup mini marshmallows
- ½ cup chocolate chips or chopped chocolate
- ½ cup chopped nuts, optional
For the Top
- Extra mini marshmallows
- Chocolate chips
- Crushed biscuits
- Melted chocolate
- A light dusting of Rescue Roast® Hot Chocolate powder
Method
1. Line a small square or rectangular baking tin with baking paper.
2. Break the biscuits into rough pieces.
Do not crush them completely. You want a mixture of smaller crumbs and larger crunchy biscuit pieces throughout the slice.
3. Add the chocolate, butter and golden syrup to a heatproof bowl.
4. Melt gently in the microwave in short bursts, stirring between each burst, or melt over a bowl of gently simmering water.
5. Once smooth, stir in the Rescue Roast® Hot Chocolate powder.
Mix until the chocolate mixture is glossy and completely combined.
6. Allow the mixture to cool for a few minutes before adding the marshmallows.
This is important. If the mixture is too hot, your marshmallows may melt completely instead of remaining as soft little pockets throughout the slice.
7. Fold in the broken biscuits, mini marshmallows, chocolate chips and chopped nuts if using.
8. Spoon the mixture into your prepared tin and press it down gently.
9. Sprinkle additional marshmallows, chocolate pieces and crushed biscuits over the top.
10. Refrigerate for at least 3 hours, or until completely firm.
11. Remove from the tin and cut into squares or bars.
The Important Marshmallow Rule
Let the melted chocolate mixture cool slightly before adding your marshmallows.
Warm is fine.
Scorching hot is not.
Otherwise your beautiful rocky road turns into something closer to chocolate marshmallow soup.
Still delicious.
Just considerably more difficult to cut into squares.
Make It Your Own
Rocky road is one of those recipes where rules are really more like suggestions.
You can add almost anything you like.
- Chopped almonds
- Hazelnuts
- Peanuts
- White chocolate chunks
- Caramel pieces
- Honeycomb pieces
- Dried cranberries
- Mini pretzels
- Extra marshmallows
Basically, if it tastes good covered in chocolate, it probably belongs here.
Rescue Roast® Mocha Rocky Road
We could hardly make another chocolate recipe without finding a way to involve coffee.
Add approximately 1 teaspoon of instant espresso powder to the melted chocolate mixture.
The coffee deepens the chocolate flavour and gives the finished slice a subtle mocha character.
Serve it with a freshly brewed cup of Rescue Roast® coffee and your afternoon coffee break suddenly becomes considerably more interesting.

Once completely chilled, rocky road keeps its shape beautifully and makes an excellent homemade gift.
Cut it into small squares and package it in a clear bag, box or jar.

Keep It in the Fridge
Store your Rescue Roast® Hot Chocolate Rocky Road in an airtight container in the refrigerator.
Serving it slightly chilled gives you that wonderful combination of firm chocolate, crunchy biscuits and soft marshmallows.
It also means there is a container of chocolate rocky road waiting for you every time you open the fridge.
That may or may not be a dangerous situation.
250 g or 500 g?
Rescue Roast® Hot Chocolate is available in both 250 g and 500 g bags.
The 250 g bag is perfect for enjoying as hot chocolate and occasionally experimenting with one of our Rescue Roast® Academy recipes.
But if you have been following this series, your Hot Chocolate powder has now been turned into puddings, cakes, cookies, cheesecake, pancakes, French toast, oats, banana bread and rocky road.
At this stage, the 500 g bag is beginning to look less like an indulgence and more like sensible kitchen planning.
