Rescue Roast® Off The Leash Tiramisu Cups

Bold coffee, creamy mascarpone and rich cocoa in one seriously indulgent dessert. These individual tiramisu cups use Rescue Roast® Off The Leash to give the coffee layer enough strength to shine through the mascarpone, cream and cocoa.
Ingredients
For the Coffee Soak
- 180 ml freshly brewed Rescue Roast® Off The Leash coffee, cooled
- 1 tablespoon brown sugar
- 1 teaspoon vanilla extract
For the Mascarpone Cream
- 250 g mascarpone
- 250 ml fresh cream
- 60 g icing sugar
- 1 teaspoon vanilla extract
For Assembly
- Approximately 200 g finger biscuits
- Unsweetened cocoa powder, for dusting
- Dark chocolate shavings, optional
- Coffee beans, optional, for decoration
Method
- Brew the Rescue Roast® Off The Leash coffee nice and strong, then allow it to cool completely.
- Stir the brown sugar and vanilla extract into the cooled coffee.
- Place the mascarpone in a mixing bowl and beat gently until smooth.
- In a separate bowl, whip the fresh cream and icing sugar until soft peaks form.
- Add the vanilla extract.
- Fold the whipped cream gently into the mascarpone until smooth and creamy.
- Break the finger biscuits into pieces that will fit into your serving glasses.
- Dip each biscuit briefly into the cooled Off The Leash coffee mixture. Do not soak them for too long or they may become too soft.
- Place a layer of coffee-soaked biscuits into the bottom of each glass.
- Spoon or pipe a generous layer of mascarpone cream over the biscuits.
- Repeat with another layer of coffee-soaked biscuits and mascarpone cream.
- Cover and refrigerate for at least 4 hours, although overnight gives the best flavour and texture.
- Just before serving, dust generously with cocoa powder.
- Finish with dark chocolate shavings or a few coffee beans if desired.

Rescue Roast® Off The Leash is particularly well suited to tiramisu because its bold, intense character does not disappear beneath the mascarpone and cream.
The coffee brings deep roasted flavour and a pleasant bitterness that balances the sweetness of the cream, while its dark chocolate and roasted nut character works naturally with the cocoa topping.

Serving Suggestion
Serve the tiramisu cups straight from the refrigerator with:
- A generous dusting of cocoa powder
- Dark chocolate curls
- A few chocolate-coated coffee beans
- Fresh berries for contrast
- Or a small cup of Rescue Roast® Off The Leash on the side
Rescue Roast® Tip
If you want an even more intense coffee flavour, brew the Off The Leash slightly stronger than you normally would. The biscuits, mascarpone and cream will soften the coffee considerably once everything is layered together.
