Rescue Roast® Signature Blend Coffee Ice Cream

Cold, creamy and packed with proper coffee flavour.

This Rescue Roast® Signature Blend Coffee Ice Cream is made for people who want their coffee desserts to actually taste like coffee.

It is smooth, rich and creamy, with freshly brewed Rescue Roast® Signature Blend giving it a deep roasted flavour that balances beautifully with the sweetness of the condensed milk and cream.

Best of all, you do not need an ice-cream machine.

A bowl, a whisk and a freezer are enough.

Ingredients

  • 500 ml whipping cream, well chilled
  • 1 x 385 g tin sweetened condensed milk
  • 80 ml strong freshly brewed Rescue Roast® Signature Blend coffee
  • 1 teaspoon vanilla extract
  • Pinch of salt

Optional Extras

  • 80 g dark chocolate, finely chopped
  • Chocolate shavings for serving
  • Crushed chocolate biscuits
  • Roasted nuts
  • Caramel sauce

Method

1. Brew the Coffee

Prepare approximately 80 ml of strong Rescue Roast® Signature Blend coffee.

The coffee needs to be stronger than your usual drinking brew because its flavour will soften once mixed with the cream and condensed milk.

Allow the coffee to cool completely before continuing.

2. Prepare the Coffee Mixture

Pour the condensed milk into a mixing bowl.

Add the cooled Rescue Roast® Signature Blend coffee, vanilla extract and pinch of salt.

Stir until completely combined.

3. Whip the Cream

Pour the cold whipping cream into a separate large mixing bowl.

Beat until firm peaks form.

The cream should hold its shape, but be careful not to continue beating until it starts becoming buttery.

4. Combine

Add approximately one-third of the whipped cream to the coffee and condensed milk mixture.

Stir gently to lighten the mixture.

Add the remaining whipped cream in two batches, folding gently with a spatula.

Continue folding until everything is evenly combined and no large streaks of cream remain.

5. Add Optional Chocolate

If you would like a little extra texture, fold finely chopped dark chocolate through the ice-cream mixture.

The small pieces of chocolate add a lovely crunch without overpowering the coffee.

6. Freeze

Transfer the mixture into a freezer-safe container.

Smooth the surface and cover tightly with a lid or plastic wrap.

Freeze for at least 6 hours, although overnight is best.

7. Scoop and Serve

Remove the ice cream from the freezer approximately 5–10 minutes before serving.

This gives it enough time to soften slightly and makes scooping much easier.

Serve in bowls, glasses or cones.

Dress It Up

This coffee ice cream is excellent on its own, but there are plenty of ways to make it even more indulgent.

  • Top with dark chocolate shavings.
  • Drizzle with caramel sauce.
  • Sprinkle with crushed chocolate biscuits.
  • Add roasted hazelnuts or almonds.
  • Serve alongside a warm chocolate brownie.
  • Pour a shot of hot Rescue Roast® Signature Blend over a scoop for an ultra-indulgent affogato-style dessert.

Rescue Roast® Tip

Make sure the brewed coffee has cooled completely before adding it to the condensed milk.

Warm coffee can interfere with the whipped cream and cause the mixture to lose some of the air that gives no-churn ice cream its light, creamy texture.

Strong coffee is also important.

If the coffee is brewed too weakly, the flavour can disappear once frozen.

Make It Mocha

For a chocolate-coffee version, whisk 2 tablespoons of unsweetened cocoa powder into the condensed milk and coffee mixture before folding in the cream.

You can also add chopped dark chocolate for an even richer mocha ice cream.
