Rescue Roast® Signature Blend Coffee Panna Cotta

Silky, creamy and gently infused with proper coffee flavour.

Panna cotta is one of those desserts that looks sophisticated but is actually wonderfully simple to make.

This version combines cream, vanilla and freshly brewed Rescue Roast® Signature Blend to create a smooth coffee dessert with a delicate wobble and rich roasted flavour.

It is ideal for entertaining because it can be prepared well in advance and finished just before serving.

Ingredients

  • 400 ml whipping cream
  • 100 ml milk
  • 80 ml strong freshly brewed Rescue Roast® Signature Blend coffee
  • 70 g castor sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons powdered gelatine
  • 3 tablespoons cold water
  • Pinch of salt

For Serving

  • Dark chocolate shavings
  • Cocoa powder — optional
  • Fresh berries — optional
  • Caramel sauce — optional

Method

1. Brew the Coffee

Prepare 80 ml of strong Rescue Roast® Signature Blend coffee.

Set it aside while you prepare the rest of the mixture.

2. Bloom the Gelatine

Place the cold water into a small bowl.

Sprinkle the gelatine evenly over the surface.

Leave it to stand for approximately 5 minutes, or until the gelatine has absorbed the water and softened.

3. Heat the Cream Mixture

Pour the whipping cream, milk, brewed coffee and castor sugar into a saucepan.

Add the vanilla extract and pinch of salt.

Heat gently over medium-low heat, stirring until the sugar has dissolved.

The mixture should become hot and steamy, but do not allow it to boil.

4. Add the Gelatine

Remove the saucepan from the heat.

Add the softened gelatine and stir until it has completely dissolved.

Make sure there are no visible gelatine granules remaining.

5. Strain the Mixture

For an especially smooth panna cotta, pour the mixture through a fine sieve into a jug.

This removes any small particles and makes pouring into the serving glasses easier.

6. Chill

Divide the mixture evenly between small glasses, ramekins or dessert moulds.

Allow them to cool slightly before transferring them to the refrigerator.

Chill for at least 4 hours, or until fully set.

Overnight chilling works beautifully.

7. Serve

Serve the panna cotta directly in the glasses, or carefully unmould onto small plates.

Finish with dark chocolate shavings, a light dusting of cocoa powder or a drizzle of caramel sauce.

How to Unmould Panna Cotta

If you would like to serve the panna cotta on a plate, dip the outside of the mould briefly into warm water.

Do not leave it in the water for too long.

Run a thin knife carefully around the edge, place a plate over the mould and invert it.

The panna cotta should release with a gentle wobble.

Do not boil the cream mixture after adding the coffee.

Gentle heat helps preserve the smooth texture and keeps the flavour balanced.

The coffee should be brewed strongly enough to remain noticeable once combined with the cream.

Make It Extra Special

There are several easy ways to dress up this dessert:

  • Add a thin layer of caramel sauce before serving.
  • Top with chocolate curls.
  • Add fresh raspberries or strawberries.
  • Serve with a crisp biscuit on the side.
  • Sprinkle with finely chopped roasted hazelnuts.
