Rescue Roast® Signature Blend Espresso Chocolate Mousse

Rich chocolate, bold coffee and a silky-smooth finish.
This is one of those desserts that feels elegant and indulgent but is surprisingly simple to make.
The combination of dark chocolate and freshly brewed Rescue Roast® Signature Blend creates a deep, balanced flavour where the coffee enhances the chocolate without overpowering it.
It is creamy, rich and perfect for dinner parties, special occasions or any time you feel like making dessert a little more interesting.
Ingredients
- 200 g good-quality dark chocolate, roughly chopped
- 60 ml strong freshly brewed Rescue Roast® Signature Blend coffee
- 300 ml whipping cream
- 2 tablespoons icing sugar
- 1 teaspoon vanilla extract
- Pinch of salt
For Serving
- Dark chocolate shavings
- Cocoa powder — optional
- Fresh berries — optional
- Extra whipped cream — optional
Method
1. Brew the Coffee
Prepare 60 ml of strong Rescue Roast® Signature Blend coffee.
You want the coffee concentrated enough to bring a noticeable depth of flavour to the chocolate.
Set it aside while you prepare the chocolate.
2. Melt the Chocolate
Place the chopped dark chocolate into a heatproof bowl.
Melt it gently over a saucepan of barely simmering water, making sure the bottom of the bowl does not touch the water.
You can also melt the chocolate in the microwave in short bursts, stirring between each burst.
Once smooth, remove it from the heat.
3. Add the Signature Blend Coffee
Slowly pour the warm brewed coffee into the melted chocolate while stirring continuously.
Add the pinch of salt and vanilla extract.
Mix until completely smooth and glossy.
Allow the chocolate mixture to cool for approximately 10–15 minutes. It should still be soft and fluid, but no longer hot.
4. Whip the Cream
Pour the cold whipping cream into a mixing bowl.
Add the icing sugar and beat until soft peaks form.
Be careful not to overwhip the cream. You want it light and fluffy rather than stiff.
5. Fold Everything Together
Add approximately one-third of the whipped cream to the chocolate mixture and stir gently to loosen it.
Add the remaining cream in two batches, folding gently with a spatula until the mixture is smooth and evenly combined.
Take your time with this step so that you keep as much air in the mousse as possible.
6. Chill
Spoon the mousse into individual glasses, ramekins or small dessert bowls.
Cover and refrigerate for at least 2 hours, or until properly chilled and set.
7. Finish and Serve
Remove the mousse from the refrigerator shortly before serving.
Top with dark chocolate shavings or a light dusting of cocoa powder.
You can also add fresh berries or a small spoonful of whipped cream if you want a more elaborate dessert.
Rescue Roast® Tip
Use good-quality dark chocolate with a cocoa content of around 60–70%.
Chocolate that is too sweet can overpower the coffee, while extremely bitter chocolate can make the mousse heavier than it needs to be.
The goal is balance.
Rescue Roast® Signature Blend brings its own smooth, rounded coffee character, so you want the chocolate to complement it rather than compete with it.
Make It Ahead
This is an excellent dessert for entertaining because it can be prepared the day before.
Simply make the mousse, divide it into serving glasses and keep it refrigerated until needed.
Add your chocolate shavings, cocoa powder or other toppings just before serving.
