Rescue Roast® Signature Blend Mocha French Toast

Rich coffee, chocolate and golden French toast in one seriously indulgent breakfast.

French toast is already one of the great comfort breakfasts.

Add freshly brewed Rescue Roast® Signature Blend and a little cocoa, and it becomes something even better.

This mocha French toast is soft and custardy inside, golden on the outside and packed with just enough coffee and chocolate flavour to make breakfast feel like a proper treat.

Ingredients

  • 6 thick slices brioche, challah or soft white bread
  • 3 large eggs
  • 120 ml milk
  • 60 ml strong freshly brewed Rescue Roast® Signature Blend coffee, cooled
  • 1 tablespoon unsweetened cocoa powder
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Butter for frying

For Serving

  • Maple syrup or honey
  • Fresh berries
  • Chocolate shavings
  • Dusting of cocoa powder
  • Whipped cream — optional

Method

1. Brew the Coffee

Prepare 60 ml of strong Rescue Roast® Signature Blend coffee.

Allow it to cool before adding it to the egg mixture.

2. Make the Mocha Custard

In a shallow bowl, whisk together the eggs, milk, cooled coffee, cocoa powder, brown sugar, vanilla extract and salt.

Whisk until the cocoa is well incorporated and the mixture is smooth.

3. Soak the Bread

Dip each slice of bread into the mocha custard mixture.

Allow it to soak for approximately 15–20 seconds per side.

Thicker bread can absorb more custard, but avoid leaving it too long or it may become difficult to handle.

4. Cook the French Toast

Heat a large frying pan over medium heat and add a little butter.

Place the soaked bread into the pan and cook for approximately 2–3 minutes per side.

The outside should be golden brown while the centre remains soft and custardy.

Cook the slices in batches if necessary.

5. Serve

Stack the warm French toast onto plates.

Drizzle with maple syrup or honey and finish with your favourite toppings.

Fresh berries add a lovely contrast, while chocolate shavings make the mocha flavour even more indulgent.

Make It Extra Indulgent

For a weekend brunch version, serve the French toast with:

  • A spoonful of whipped cream
  • Chocolate sauce
  • Fresh strawberries or raspberries
  • Caramelised banana slices
  • Chopped roasted hazelnuts

Rescue Roast® Tip

Use slightly stale bread if you have it.

Bread that is a day old absorbs the coffee custard beautifully without becoming too fragile.

Brioche is especially good because its rich, buttery texture works perfectly with coffee and chocolate.

Turn It Into Dessert

This recipe does not have to stay at the breakfast table.

Serve warm mocha French toast with a scoop of vanilla or Rescue Roast® Signature Blend Coffee Ice Cream and you have an easy dessert.

A drizzle of chocolate sauce certainly does not hurt either.
