Signature Coffee - Balsamic Mushroom Crostini

Rescue Roast® Signature Coffee & Balsamic Mushroom Crostini

A warm, savoury starter featuring buttery mushrooms in a rich balsamic and Rescue Roast® Signature Blend reduction, served on crisp toasted bread with creamy feta.

Ingredients

Toasted crostini

✓ 1 French loaf or baguette
✓ 2 tablespoons olive oil
✓ 1 garlic clove, halved
✓ Pinch of salt

Signature coffee mushrooms

✓ 500 g mixed mushrooms, sliced
✓ 2 tablespoons butter
✓ 1 tablespoon olive oil
✓ 2 garlic cloves, finely chopped
✓ 1 teaspoon fresh thyme leaves
✓ ¼ cup strongly brewed Rescue Roast® Signature Blend
✓ 2 tablespoons balsamic vinegar
✓ 1 tablespoon brown sugar or honey
✓ 1 teaspoon Worcestershire sauce
✓ Salt and freshly ground black pepper

Topping

✓ 100 g feta cheese or smooth cream cheese
✓ Fresh thyme or chopped parsley
✓ Balsamic glaze, optional
✓ Freshly ground black pepper

Method

  1. Preheat the oven to 200°C.

  2. Slice the baguette diagonally into pieces approximately 1½ cm thick.

  3. Arrange the slices on a baking tray and brush both sides lightly with olive oil.

  4. Bake for 8–10 minutes, turning once, until crisp and lightly golden.

  5. Rub one side of each warm toast with the cut side of the garlic clove. Season lightly with salt.

  6. Heat the butter and olive oil in a large frying pan over medium-high heat.

  7. Add the mushrooms and cook without stirring too frequently, allowing them to brown properly.

  8. Add the chopped garlic and thyme, then cook for another minute.

  9. Combine the brewed Rescue Roast® Signature Blend, balsamic vinegar, brown sugar and Worcestershire sauce.

  10. Pour the coffee mixture over the mushrooms.

  11. Cook for 4–6 minutes, stirring occasionally, until the liquid has reduced to a rich, glossy coating.

  12. Season with salt and freshly ground black pepper.

  13. Spread or crumble a little feta or cream cheese onto each toasted baguette slice.

  14. Spoon the warm coffee-balsamic mushrooms over the cheese.

  15. Finish with fresh herbs, black pepper and a light drizzle of balsamic glaze.

  16. Serve immediately while the mushrooms are warm and the crostini are still crisp.

Rescue Roast® Coffee Tip

Use a strong, freshly brewed Signature Blend, but avoid reducing it on its own for too long. Combining it with balsamic vinegar and a touch of sweetness creates a balanced savoury glaze without making the mushrooms taste bitter.
