Makes
Approximately 10–12 rolls
Ingredients
Soft coffee dough
✓ ¾ cup warm milk
✓ 2¼ teaspoons instant yeast
✓ ¼ cup white sugar
✓ 1 large egg
✓ ¼ cup butter, melted and cooled slightly
✓ ¼ cup strongly brewed Rescue Roast® Signature Blend, cooled
✓ 3–3½ cups cake flour
✓ ½ teaspoon salt
Coffee-cinnamon filling
✓ ½ cup soft butter
✓ ¾ cup brown sugar
✓ 1½ tablespoons ground cinnamon
✓ 1 teaspoon instant coffee powder
✓ Pinch of salt
Signature coffee glaze
✓ 1 cup icing sugar
✓ 2 tablespoons cream cheese, softened
✓ 1–2 tablespoons strongly brewed Rescue Roast® Signature Blend, cooled
✓ ½ teaspoon vanilla essence
✓ Pinch of salt
Method
-
Pour the warm milk into a large mixing bowl.
-
Add the yeast and sugar, then stir gently. Leave it for 5–10 minutes until slightly foamy.
-
Add the egg, melted butter and cooled Rescue Roast® Signature Blend.
-
Mix in three cups of flour and the salt.
-
Add a little more flour as needed until a soft, slightly tacky dough forms.
-
Knead the dough for approximately 8–10 minutes, until smooth and elastic.
-
Place the dough in a lightly greased bowl, cover it and leave it in a warm place for approximately 60–90 minutes, or until doubled in size.
-
Mix the brown sugar, cinnamon, instant coffee powder and salt together.
-
Roll the risen dough into a large rectangle on a lightly floured surface.
-
Spread the softened butter evenly over the dough.
-
Sprinkle the coffee-cinnamon mixture over the butter.
-
Roll the dough up tightly from the longer side to form a log.
-
Cut the log into 10–12 evenly sized rolls.
-
Arrange the rolls in a greased baking dish, leaving a little space between them.
-
Cover and allow them to rise for another 30–40 minutes.
-
Preheat the oven to 180°C.
-
Bake the rolls for approximately 22–28 minutes, or until lightly golden and cooked through.
-
Mix the icing sugar, cream cheese, vanilla essence and salt together.
-
Gradually add the cooled Signature Blend until the glaze reaches a smooth, pourable consistency.
-
Drizzle the glaze over the warm cinnamon rolls before serving.
Rescue Roast® Coffee Tip
Use a strong, cooled brew in both the dough and glaze. Add the coffee to the glaze gradually, as too much liquid can make it runny.
For extra-soft rolls, avoid adding too much flour—the dough should remain soft and slightly tacky before rising.
