Rescue Roast Coffee Rusk Recipe
Makes
Approximately 30–40 rusks
Ingredients
Dry Ingredients

1kg self-raising flour
-
250g sugar
-
10ml salt
Wet Ingredients
-
500ml buttermilk
-
150ml strong Rescue Roast coffee
-
2 large eggs
-
125g melted butter
Optional Additions
-
100g chopped pecan nuts
-
50g chocolate chips
-
1 teaspoon cinnamon
Step 1: Brew the Coffee
Prepare:
150ml strong Rescue Roast coffee
using Blend #2.
Allow the coffee to cool.
Step 2: Prepare the Dry Ingredients
In a large mixing bowl combine:

Flour

Sugar
-
Salt
Mix thoroughly.
Step 3: Prepare the Wet Ingredients
In a separate bowl combine:

Buttermilk

Coffee
-
Eggs
-
Melted butter
Mix well.
Step 4: Combine
Pour the wet ingredients into the dry ingredients.
Mix until a soft dough forms.
If desired, add:
✔ Pecan nuts
✔ Chocolate chips
✔ Cinnamon
Mix evenly.
Step 5: Bake
Grease a large baking dish.
Transfer the dough to the dish and spread evenly.
Bake at:
180°C
for approximately:
45–50 minutes
or until golden brown.
Step 6: Cut the Rusks
Allow the baked dough to cool slightly.
Cut into traditional rusk-sized pieces.
Step 7: Dry the Rusks
Reduce oven temperature to:
80°C
Arrange the rusks on baking trays.
Dry for:
6–8 hours
or overnight with the oven door slightly open.
The rusks should become completely dry and crisp.
Step 8: Enjoy
Allow the rusks to cool completely before storing.
Store in an airtight container.
